Health Corner: Avocado Toast Recipe

When you have one of those dreaded 8 a.m. classes, it can be hard to whip up something quick or expensive to grab something for breakfast. To whip up a quick and healthy breakfast, grab your skillet, a toaster, some ripe avocados (they should be slightly squishy), a single egg, and a slice of bread of your choice! Wheat bread or bread with nuts and grains make for a yummy low-cal pick. Avocados are a good, healthy fat for you and a great breakfast food with so many health benefits. Bread is a great source of necessary grain and carbohydrates and eggs are an (egg)cellent source of protein.

Ingredients:

  • 1 slice whole grain bread, toasted (1.5 oz)
  • 1 oz mashed ¼ cup avocado
  • cooking spray
  • 1 large egg
  • kosher salt and black pepper to taste
  • hot sauce (optional)

Directions:

  • Mash the avocado in a small bowl and season with salt and pepper.
  • Heat a small nonstick skillet over low heat, spray with oil and gently crack the egg into the skillet. Cover and cook over easy.
  • Spread mashed avocado on toast, top with cooked egg, salt and pepper and hot sauce for an extra kick, if desired!
